Miso-han Co. Ltd., owning five group companies introduced in this article, retails and wholesales Japanese vermicelli, Japanese wheat noodle and buckwheat noodle using carefully screened domestic wheat and natural salt "Umi ha Inochi", as well as agricultural and marine products and other processed foods, under the motto of producing foods for ever-living healthy life. Noodles produced by Matsunaga-Menko Inc., a company in Miso-han group, are aged in storehouse along with charcoal. The charcoal supplies minus ion, which prevent the oil from oxidized and noodle from deteriorated, and further more align gluten or the heart of the noodle. "Umi ha Inochi" Co. Ltd. produces and delivers natural salt, "Umi ha Inochi" and other related products. The salt dried in salt field has no longer available in Japan due to the contamination of seawater, but in Mexico the solar salt is still produced using only natural energy of sun and wind. We screen Mexican solar salt repeatedly and mix with domestically produced bittern (mineral) fished out of clean seawater near Sakito-shima island of Nagasaki-ken, to make it the closest ingredient balance as water sea. Then the salt is recrystallized in flat iron pot which is, in case of our company, not open but fully concealed to prevent foreign materials from mixed in. The salt "Umi ha Inochi" is boiled slowly at low temperature in our uniquely designed flat iron pot, and its crystal looks like thin and crumby fish scale (or flake) with large superficial area (see attached picture).

The characteristics of the natural salt "Umi ha Inochi" are as follows. The different better taste is supplied.

  • No strong and sharp taste but mellow.
  • Bring out the full flavor of foodstuff and keep its taste and color longer with very high osmotic pressure.
  • As the crystal of the salt is in flake shape, it is easy to adhere to foodstuff and required quantity is 20% less than other regular types of salt.
  • The required quantity of chemical additive or antioxidant can be reduced to 50%.
  • As the aging of foodstuff is accelerated, the duration towards the delivery date can be shorten and the running cost can be reduced.
  • As the velocity of dissolution is twice as fast as other types of natural salt or regular salt and hard to coagulate, productivity is improved and product dispersion is eliminated.

JMC Co. Ltd.

JMC produces and delivers cosmetics and imports and delivers foodstuff. "Virgin salt" (beautification salt) is a new type of beauty pack for face and body. Since it contains natural minerals with similar balance of components of human's body fluid, it gives tender feeling for skin. This salt is developed after long-term studies under the concept of Thelassa Therapy (coined terms of Thalassa (marine in Greek) and Therapie in French, named by a French doctor, Le Bona De Ale in 1876, called marine therapy in Japan). In the nature world, dead bodies of animals and leaves become water and soil through bacterial (microorganism's) decomposition. Microorganism (bacteria) is in the center of "ecosystem recycling mechanism" produced by the natural depuration effect. The company was founded in 1984 and currently thirteen professional craftsmen produce noodles to best fit to particular area and season with strictly chosen materials. The company is capable of producing two hundreds and seventy tons of noodles a year, ranked at middle among other pasta production factories in Nagasaki.

The noodles produced by Matsunaga-Menko is made of strictly chosen domestic wheat, natural salt "Umi ha Inochi" and spring water taken from spiritual Mt. Unzen. It has tasty body and special smoothest eating quality can be felt at gullet. The main type of noodle products is dry noodle, but its factory has a clean room to produce semi-dry noodles and the company is making his best to satisfy consumers any kind of preference.
